Cucumber Apple Salad - Phase 2 Vegan
-1/2 chopped apple
-1 sliced cucumber
-2 T. apple cider vinegar
-1 T. water
-garlic salt
-pepper
-Stevia*
1.Chop apple and slice cucumber in thin pieces.
2.Combine vinegar and water.
3.Season with garlic salt, pepper and Stevia* to taste.

Green Onion Soup -Phase 2 Vegan
-Green Onions (allowed amount)
-2 cups vegetable broth
-1 tsp parsley
-1 tsp Stevia
-1/2 tsp paprika
-1/2 tsp salt
-1/2 tsp dill
-1/2 tsp thyme
-1/8 tsp cayenne or red pepper flakes
-1/8 tsp celery seed
1.Steam the green onions until tender.
2.Preheat the pan on meduim heat.
3.Chop up the steamed green onions.
4.In the pan, sauté the green onions in a bit of vegetable broth for a couple of minutes
5.Add the parsley, stevia, paprika, salt, dill, thyme, celery seed, and cayenne. Sauté 1-2 minutes more.
6.Add remaining vegetable broth.
7.Reduce heat. Cover and simmer for 20-30 min
Grilled Zucchini
-3 1/2 ounces zucchini
- 1 t sea salt
-1 t pepper
-1 t lemon juice
1.Cut zucchini into thin slices. Add salt, pepper, and lemon juice.
2. place on a grill over medium heat. Cook until tender and serve!
Mandarin Salad and Honey Mustard Dressing- Phase 3 Vegan
2 cups Baby Greens
2 Mandarin Oranges, peeled and sectioned
1/4 cup walnuts, broken up
1/4 Red Onion, chopped
Dressing:
2 Tbs Olive Oil
2 Tbs Honey or Agave Nectar
2 Tbs Brown Spicy Mustard
Sea Salt and Pepper to taste
Plate the greens, orange walnuts and onion. Whisk dressing ingredients together and toss with salad.
